# Chickpea Salad Great for a side or light lunch. ## Mix base ingredients. - Chickpeas (canned), 2 cans: Drain and rinse. - Red onion: Mince very finely. - Parsley: Chop. Combine ingredients in mixing bowl. ## Dress and serve. - Olive oil - Vinegar (balsamic) - Salt - Black pepper Dress salad and season to taste. --- Variations: Substitute any canned beans for one of the cans of chickpeas. Add pasta, fresh mozzarella, raisins, or jarred pickled vegetables.
